Meat Doneness Guide: Internal Temperatures from Rare to Well Done

Doneness is a temperature, not a color. I learned this after slicing into a pork chop that looked perfectly white inside and finding out the thermometer read 138F. It looked done. It was not. The reverse happens too - chicken near the bone can stay pink at 185F because marrow pigment leaches into the meat. Color lies. A thermometer does not.

Each meat type has different safe minimums. Beef and lamb can be served rare because bacteria stays on the surface of whole muscle cuts. Poultry must hit 165F because Salmonella colonizes the interior tissue. Pork sits in between - the USDA dropped its minimum to 145F in 2011 after decades of improved farming eliminated most trichinella risk. Pork Doneness

The USDA revised pork's safe minimum from 160F to 145F in 2011. That 15-degree change transformed pork chops from dry cardboard into something juicy. Trichinella spiralis, the parasite behind the old guideline, is killed at 137F. At 145F with a 3-minute rest, you have a comfortable safety margin and pork that is noticeably better.

Pork at 145F will have a slight pink center. That is normal and safe. The pink comes from myoglobin, a protein in muscle tissue, not from being undercooked. Myoglobin does not fully denature until around 170F.

Poultry: No Doneness Levels

There is no "medium-rare chicken." All poultry - chicken, turkey, duck, game hen - must reach 165F (74C) for instant pasteurization. The USDA does not offer a lower threshold for whole muscle poultry the way it does for beef and pork, because Salmonella colonizes poultry muscle tissue internally, not just the surface.

That said, 165F is where dark and white meat diverge in quality. Chicken breast dries out fast above 165F because it is almost pure muscle fiber with minimal connective tissue. Pull breast meat right at 165F and it stays juicy. But thighs, drumsticks, and wings taste significantly better at 175-180F.

The reason is collagen. Dark meat contains roughly 3x more connective tissue than white meat. Collagen begins converting to gelatin around 160F, but the process accelerates above 170F. At 165F, dark meat is safe but chewy. At 180F, the collagen has melted into gelatin, giving the meat that tender, pull-apart texture. This is why thighs and drumsticks are more forgiving than breasts - you actually want to overshoot the safety minimum.

Dark Meat (Thighs, Drums, Wings)

Safe at 165F but better at 175-180F. Collagen melts into gelatin, transforming chewy connective tissue into tender, juicy meat.

Time-temperature alternative: Chicken held at 150F (65.5C) for 2.8 minutes achieves the same 7-log Salmonella reduction as 165F instantly. This is the basis for sous vide chicken. But you need a leave-in probe or water bath to verify the hold time - an instant-read snapshot is not sufficient. For conventional cooking methods, stick with 165F.

Lamb Doneness Chart

Lamb follows similar rules to beef. The USDA recommends 145F for whole cuts, but restaurants regularly serve lamb chops and rack of lamb at 130F (medium-rare). The food safety logic is the same as beef - bacteria stays on the surface of intact muscle cuts, and searing handles that. Lamb fat has a higher melting point than beef fat, so medium-rare lamb keeps a softer, more buttery texture.

Ground lamb follows the same rule as all ground meat - cook to 160F. Lamb shanks and shoulder, like their pork and beef counterparts, need 195-205F for the collagen to break down.

Why Doneness Rules Differ by Meat

The temperature rules are not arbitrary. They reflect three different biological realities about how bacteria and connective tissue behave in each type of meat.

Whole muscle vs ground: surface bacteria vs distributed

On a whole steak, bacteria lives only on the exterior surface. A hot sear at 400F+ kills surface pathogens within seconds, which is why the interior can safely stay at 125F. Grinding takes that contaminated surface and mixes it throughout the meat. Every particle of ground beef, pork, or lamb was once a surface. That is why all ground meat needs 160F internally - the bacteria is no longer confined to a surface you can sear off.

Poultry vs red meat: Salmonella colonizes differently

Salmonella in poultry is not just a surface problem. The bacteria colonizes the bird's intestinal tract during its lifetime and can migrate into muscle tissue before slaughter. Studies have found Salmonella inside intact chicken breast muscle, not just on the skin. This is fundamentally different from beef, where E. coli and other pathogens stay on the exterior of whole cuts. That internal colonization is why poultry requires 165F throughout - you cannot sear your way to safety.

Braised cuts: 195-205F for texture, not safety

Brisket, pork shoulder, lamb shanks, and short ribs are all safe at their respective minimums (145F for beef and pork, 165F for poultry). But nobody eats brisket at 145F because the collagen has not broken down. Collagen starts converting to gelatin around 160F, but the process is slow until you reach 190F+. This is why low-and-slow cooking exists - you need hours at moderate heat to push these tough cuts past the safety threshold and well into the texture threshold.
