Every oven recipe comes down to two decisions: what temperature and how long. Get the temperature wrong by 50 degrees and you either burn the outside before the center cooks, or wait 90 minutes for something that should take 40. Oven Temperature Ranges

Your oven is not a single tool. It is four different cooking environments depending on the temperature. A 250F oven behaves nothing like a 475F oven, and using the wrong range is the most common reason food turns out wrong.

Low and Slow: 200-275°F

This range breaks down tough connective tissue into gelatin over hours. The low heat prevents the outer layers from drying out while the interior slowly reaches temperature.

Best for: Braised short ribs, pulled pork, beef brisket, slow-roasted pork shoulder, dried herbs, meringues. Plan 45-60 minutes per pound for large roasts at this range.

Moderate: 300-350°F

The workhorse range for home cooking. Gentle enough to cook through thick items without burning, hot enough to finish in a reasonable time. Nearly every baked good, casserole, and braised meat starts here.

Best for: Casseroles, cakes, muffins, banana bread, meatloaf, baked pasta, cheesecake, dense roasts (pork loin, bone-in chicken). The 350F default exists for a reason.

High: 375-425°F

This is where browning happens. The Maillard reaction accelerates above 350F, creating the golden crust on roasted chicken, the caramelized edges on vegetables, and the crispy exterior on potatoes. Most proteins and vegetables cook best in this range.

Best for: Chicken breast, chicken thighs, salmon, pork chops, roasted vegetables (broccoli, Brussels sprouts, cauliflower), bacon, baked potatoes, cookies.

Very High: 450-500°F

Rapid browning and fast cooking. The oven is essentially searing food. At these temperatures, the outside crisps quickly while the inside stays slightly underdone, which is exactly what you want for pizza, bread crusts, and thin cuts.

Best for: Homemade pizza, artisan bread, naan, roasted potatoes (for maximum crispiness), thin-cut steaks, chicken wings (for crispy skin). Keep a close eye on food above 450F - the margin between golden and burnt is about 3-4 minutes.

Broil: 500-550°F (Direct Top Heat)

The broiler is a completely different cooking mode. Instead of surrounding the food with ambient heat, it blasts radiant heat from the top element only. Think of it as an upside-down grill.

Best for: Finishing gratins, melting cheese on top of casseroles, charring vegetables, quick-cooking thin fish fillets, toasting bread. Position the oven rack 4-6 inches from the element and watch constantly. Food goes from perfect to charred in under 2 minutes.

Times assume a preheated oven and standard-thickness cuts. Thicker pieces take longer. Always verify proteins with an instant-read thermometer.

Convection vs Conventional Oven

A convection oven has a fan that circulates hot air around the food. This eliminates the cool pockets that form in a still oven and delivers heat to all surfaces more efficiently. The result: faster cooking and better browning.

Convection conversion rule

Temperature: Reduce by 25°F. A recipe calling for 400°F conventional becomes 375°F convection.
Time: Reduce by about 25%. A 40-minute recipe finishes in roughly 30 minutes on convection.

Oven Rack Positions

Rack position controls where the heat hits first. The heating element on the bottom radiates up. The broiler element on top radiates down. Where you place the food determines whether the top or bottom cooks faster.

Upper Third

Closer to the top element. Use when you want more browning on top - gratins, casseroles that need a golden crust, anything with cheese on top. Also the correct position for broiling. The top 3-4 inches of the oven can be 25-50F hotter than the center.

Middle Rack

The default for 90% of cooking. This is where heat from above and below reaches food most evenly. Cakes, cookies, muffins, chicken breasts, salmon, casseroles, and most roasted vegetables go here. When a recipe does not specify a rack position, use the middle.

Lower Third

Closer to the bottom element. Use for pizza (a hot bottom crisps the dough), bread (bottom crust development), and pies (prevents a soggy bottom). Also works for foods that tend to brown too much on top before the center cooks through. A pizza stone or steel on the lower rack absorbs and radiates heat for an even crispier base.

5 Oven Rules That Actually Matter

1. Wait for the preheat to finish

When your oven beeps that it has reached 375F, it is lying. The air temperature hit 375F, but the walls, racks, and floor are still catching up. Wait 10-15 minutes after the preheat signal for the entire oven cavity to stabilize. This is why the first batch of cookies often browns differently than the second.

2. Do not open the door to check

Every time you open the oven door, you lose 25-50F of heat. The oven then spends 3-5 minutes recovering. If you open the door four times during a 30-minute bake, you have added 15-20 minutes of recovery time. Use the oven light and window instead. If your oven light is burnt out, replace it - it costs $5 and saves you from constantly opening the door.

3. Leave space around pans

A sheet pan pushed against the oven wall blocks airflow on that side. Food on the edge closest to the wall will cook 20-30% faster than food on the exposed side. Keep at least 2 inches between pans and oven walls. If cooking on two racks simultaneously, stagger the pans so the top pan does not directly block heat from reaching the bottom one.

4. Rotate pans halfway through

Every oven has hot spots. The back runs hotter than the front in most models because the heating element wraps around the rear. Rotating the pan 180 degrees at the halfway mark gives even browning. For two-rack baking, swap the top and bottom pans and rotate each one.

5. Use an oven thermometer

A $7 oven thermometer hanging from the middle rack tells you the real temperature. If your cookies always burn at the recipe's suggested time, your oven probably runs hot.
