5 Rules for Better Air Fryer Results
1. Do not overcrowd the basket
Single layer, every time. When chicken wings pile on top of each other, the pieces in the middle steam instead of crisping - you end up with rubbery skin on 40% of the batch. If you have more food than fits in one layer, cook in batches. The second batch actually cooks faster because the air fryer is already hot.
2. Shake or flip halfway through
Set a timer for the midpoint and shake the basket (for small items like fries or Brussels sprouts) or flip with tongs (for chicken, fish, chops). The bottom side sits on the basket and gets less airflow. Skipping this step means one side browns perfectly while the other stays pale. For foods over 1 inch thick, a flip is more effective than a shake.
3. Use oil - but the right amount
A light spray of avocado oil or olive oil makes a noticeable difference in crispiness. About 1-2 seconds of spray per side is enough. Too much oil pools at the bottom and smokes. Avoid cooking sprays with propellants (like PAM) - they damage nonstick coatings over time. A refillable oil mister with pure oil works best.
4. Pat proteins dry before cooking
Surface moisture is the biggest enemy of crispiness. Chicken thighs straight from the package have a wet surface that steams instead of browning. Pat them dry with paper towels, then season. This one step makes more difference than any temperature adjustment. For frozen foods, skip this - the rapid evaporation from the frozen surface actually helps create a crispy exterior.
5. Pull food 5 degrees early for carryover cooking
Thick proteins (chicken breast, pork chops, steak) continue cooking for 3-5 minutes after you remove them. A chicken breast pulled at 160°F will coast up to 165°F while resting. If you wait until the thermometer reads 165°F in the air fryer, it will overshoot to 170°F+ and dry out. This is the difference between juicy and chalky chicken.
