Why Pork Can Be Pink Now

The old 160F rule came from genuine fear of Trichinella spiralis, a parasitic roundworm that once infected roughly 4% of U.S. pigs. Modern farming practices - controlled feed, indoor housing, rodent prevention - have virtually eliminated it. The CDC reported just 7 cases from domestic pork between 2011 and 2015, compared to hundreds annually in the 1940s.

Trichinella is killed at 137F held for one minute. At 145F with a 3-minute rest, the pork spends enough time above that threshold to kill the parasite several times over. The USDA reviewed decades of food science data before making the change. This was not a casual decision.

The pink color at 145F comes from myoglobin, a protein that carries oxygen in muscle tissue. Myoglobin does not fully denature until around 170F, which is why properly cooked pork can look slightly pink and still be completely safe. Judging doneness by color alone is unreliable for pork. A thermometer is the only way to confirm.

Cuts That Need Higher Temperatures

Not every pork cut is best at 145F. Some need higher temperatures for reasons that have nothing to do with safety.

Ground pork - 160F (no rest required)

Grinding distributes surface bacteria throughout the meat. A whole pork chop has bacteria only on the outside, where searing kills it in seconds. Ground pork has potential contamination in every bite, so the entire mass must reach 160F. This applies to sausage patties, meatballs, meat loaf, and any loose ground pork in a skillet.

Ribs - 195-205F (collagen breakdown)

Baby backs, spare ribs, and St. Louis style ribs are technically safe at 145F, but nobody wants to eat them at that temperature. Ribs are loaded with connective tissue that stays tough and chewy until it converts to gelatin between 195-205F. This conversion is what makes ribs tender enough to pull cleanly from the bone. Most competition pitmasters target 203F for baby backs and 205F for spare ribs.

Pork shoulder / pulled pork - 195-205F (shreddability)

Pork shoulder (also called pork butt) contains about 15% collagen by weight. At 145F it slices like a roast but will not shred. The collagen needs 195-205F to fully convert to gelatin, which is why pulled pork takes 10-14 hours in a smoker. Pull it at 203F, wrap in foil, and rest for 30-60 minutes. The temperature will coast up a few more degrees during the rest.

Common Pork Mistakes

Overcooking tenderloin to 160F+ out of habit

Pork tenderloin is the leanest cut on the animal at roughly 3% fat. At 145F it is juicy and tender. By 160F it has lost 15-20% of its moisture and tastes like sawdust. If you grew up with dry pork tenderloin, the old 160F rule is why. Pull it at 140F and let carryover take it to 145F during a 10-minute rest.

A 1-inch pork chop needs 5 minutes of rest. During cooking, muscle fibers contract and push moisture toward the surface. Cutting immediately releases that moisture onto the plate - you can lose 30% of the juice. Resting lets the fibers relax and reabsorb the liquid. Tent loosely with foil if your kitchen is cool.

Pulling ribs too early

Ribs hit the "stall" between 150-170F where evaporative cooling slows the temperature rise to a crawl. Impatient cooks pull ribs at 170-180F thinking they are done. The meat is safe but the connective tissue is still tough. Push through the stall - wrap in foil at 165F if you want to speed things up - and take them to at least 195F. The bend test works too: lift the rack from the center with tongs and it should crack on the surface without breaking apart.

Using time instead of temperature for thick cuts

A 2-inch bone-in pork chop takes roughly twice as long as a 1-inch boneless chop, but oven temperature, starting meat temperature, and whether you seared first all shift the timing. A recipe that says "bake 25 minutes" might work for the author's oven and cut but miss yours by 10 minutes. Use a thermometer. Pull at 140F for whole cuts and let carryover finish the job.
