Beef is the one protein where "safe" and "done" mean completely different things depending on the cut. A ribeye steak at 130F is a perfect medium-rare. A burger at 130F is a trip to the hospital. Steak and Roast Doneness Levels

These levels apply to whole muscle cuts only - steaks, tenderloin, prime rib, and roasts from the loin or rib. They do not apply to ground beef (always 160F) or braised cuts (always 195-205F for texture). Pull temps assume a 5-minute rest for steaks and 15-20 minutes for roasts.

Braised Cuts: Safe vs. Actually Edible

Common Mistakes That Ruin Beef

Treating all beef cuts the same

A filet mignon and a chuck roast come from the same animal, but they cook by completely different rules. The filet is lean, tender muscle that is best at 130-140F.
