Method
Rinse green moong dal 2-3 times and soak in water. For sprouting, drain after soaking and wrap in a damp cloth for 12-24 hours.

Beans swell to nearly double their size and the outer skin begins to split slightly.
Tips
- For sprouting, soak 8 hours, drain, and keep in a damp cloth in a warm place.
- Soaked green moong cooks much faster and is easier to digest.
- Can be cooked without soaking in a pressure cooker, but soaking improves texture.
