Method
Rinse and sort through beans. Cover with at least 3 inches of water and soak overnight. Discard soaking water before cooking.
Signs of Ready
Beans are swollen, the skin is smooth and not wrinkled, and they split easily when pressed.
Tips
- Do not confuse red beans with red kidney beans (rajma); they are smaller.
- Must be cooked thoroughly as raw red beans contain lectins.
- Excellent in Rajasthani-style curries and rice dishes.
