Method
Boil water and pour over soya chunks. Let them soak for 15-20 minutes until fully expanded. Squeeze out excess water before using.
Signs of Ready
Chunks double in size, become soft and spongy, and no hard center remains when you squeeze one.

- Always squeeze out water thoroughly to prevent a spongy, watery dish.
