Boil Cooking Times: 19+ Foods

A rolling boil (212F at sea level) is not always what you want. Hard-boiled eggs in rapidly boiling water bounce around and crack. Pasta needs a full boil to prevent sticking. Vegetables can go either way - a gentle boil preserves color and nutrients better, but takes a minute or two longer. Salt your water generously (1 tablespoon per quart) for pasta and vegetables. It does not make water boil faster, but it does raise the boiling point by about 1F per tablespoon.
