Broiling is upside-down grilling - intense direct heat from above instead of below. Most broilers run at 500-550F. Position the oven rack 4-6 inches from the element for thicker cuts, 2-3 inches for thin items like fish fillets or melting cheese. Watch constantly - the difference between perfectly charred and burnt is about 30 seconds under a broiler.
