Rule of Thumb
Rest at least 30 minutes, up to 1 hour for best results. Some pitmasters rest 2+ hours in a cooler.
Why Rest?
Extended resting allows the collagen-rich juices to thicken and be reabsorbed. A well-rested brisket will be noticeably more moist and tender.
Foil Tenting Note
Wrap tightly in foil or butcher paper, then place in a cooler (without ice) for an extended rest.
